In Provence, eating aïoli means a complete dish. It consists of steamed vegetables (potato, carrot, beetroot), a hard-boiled egg, a piece of cod. All this accompanied by a garlic ointment (the aioli) and a glass of chilled rosé!
This is "the" traditional dish from Provence, which we like to eat in the summer under the plane trees!
