AnCnoc Peatheart Whiskey, expertly produced by the Knockdhu Distillery, founded in 1894, is one of the most enchanting distilleries in the Scottish Highlands. It is surrounded by an abundance of natural resources that are perfect for whiskey making. The distillery lies in the shadow of Knock Hill, home to springs of pure, clear water, and is located in a region rich in barley and peat.
Historically, peat was embraced as a fuel to power the boiler. distilling and drying barley for whiskey distillation.
Peat smoke produces compounds called phenols, and it is by the phenolic content that the "peatiness" of a whiskey can be measured. This phenolic content is expressed as PPM (parts per million), and to ensure a consistently high phenolic content, Peatheart uses barley specified by our Master Blender, malted to 34 PPM. During the whiskey production process, phenols are lost at various stages, meaning that the final phenolic content of the whiskey is always lower than the PPM of the malted barley. This batch of Peatheart has a PPM of 13.3.
Tasting notes:
- On the nose: Sweet barbecue smoke and earthy peated notes mingle with aromas of honey and sweet spices to create a fragrant, grassy character.
- On the palate: Peated smokiness laced with green apples and citrus, sweetened with a hint of vanilla.
- Finish: Oily smoky note that lingers hanging.
