Asparagus à la flamande. But slightly different.

I love asparagus! I am therefore overjoyed when asparagus season arrives. One of the first asparagus recipes of the season is invariably the asparagus à la flamande on the menu. This Flemish classic is still one of my favourites and ideal to experiment with. I get to work with olive oil, black pepper and sea salt flakes from Falksalt. Simple. Delicious!
This is what you need for 2 people:
• 12 asparagus
• 2 eggs
• few sprigs of fresh parsley

This is how you proceed:
1. Boil the eggs hard for about 10 minutes. Remove them from the shell and crush them into coarse chunks.
2. Take the parsley sprigs and chop the parsley finely (I just do this in my Braun Kitchen Mixer).
3. Peel the asparagus and boil or steam them for a few minutes. Be careful not to overcook them.
4. Now pour a few tablespoons of Fruité Vert olive oil from Domaine de Valdition into a saucepan. Warm up the olive oil. Be careful not to let it get too hot. It is not the intention to fry in olive oil.
5. When the olive oil is warm, add the eggs. And also the parsley.
6. Now arrange the asparagus on the plate. Sprinkle with some sea salt flakes (these provide a delicious crunch in the mouth) and some black pepper.
7. Spoon over the olive oil-egg mixture and add some sea salt flakes and black pepper.
Like this. Finished! Comfortable!
If you would like to experiment a bit more, you can of course turn things around. Then you choose, for example, an olive oil that gives a little more pepper in the throat. I am thinking, for example, of the Olive Oil Picholine from Mouline du Calanquet. Then make sure you work with white pepper (which is softer and less strong).
