Chocolate pudding with long pepper from Java

We have this long pepper from Java in the range of our online spice shop. Apart from bringing some spice (less than traditional pepper), this long pepper from Java mainly adds a lot of aroma to your dishes. This pepper develops tasty aromas of violet, liquorice and resin. This is makes it an ideal pepper to go with desserts, such as this chocolate pudding.

Herbs and spices have evolved in use over time. In the Middle Ages, for example, people here in Europe did not know the pepper we know today, the small pepper berries, some of which can be quite spicy. No, back then they mainly knew the long pepper. It usually came from the Far East. We have that long pepper from Java in the range of our online spice shop. Apart from bringing some spice (less than the traditional pepper), this long pepper from Java mainly adds a lot of aroma to your dishes. This pepper develops tasty aromas of violet, liquorice and resin. This is makes it an ideal pepper to go with desserts.

 

Here now is my recipe for Java long pepper chocolate pudding.

You will need these ingredients (for 6 to 8 servings)

- 1 tablespoon of sugar
- 2 tablespoons cornstarch
- 350 ml milk
- 125 ml cream
- 140 g dark chocolate (in chips or small pieces)
- 1 teaspoon vanilla extract (you can very easily make this yourself, and you can read about it here)

These herbs and spices are from our online spice shop.

  • 2 tablespoons of cocoa (of the best quality!)
  • 1 tablespoon of real vanilla sugar (not that synthetic one from the supermarket)
  • 1/2 teaspoon mixed pepper from Java (you take 1 or 2 peppers and grind them finely in the mortar)
  • Pinch of salt

For the finishing touch, you can take some candied orange peel with some triple sec.

And this is how you go about making this delicious pudding:

1. Put the sugar, cornstarch, cocoa, vanilla sugar, Java long pepper and pinch of salt in a small saucepan or saucepan.

2. Gradually add in the milk and cream, whisking well so you don't have any lumps. Meanwhile, bring to the boil over a low heat.

3. Once the mixture is boiling, keep stirring well for about 2 minutes.

4. Now take the mixture off the heat. Now add in the chocolate and vanilla extract. Mix well until the chocolate has melted.

5. Now pour the chocolate pudding into glasses or bowls. Leave to cool in the fridge for about 2 hours. To prevent a sheet from forming on the surface of your Java long pepper chocolate pudding, cut some baking paper to size and place it on your pudding.

6. When serving the pudding, I cut some more candied orange peel into small pieces and let this marinate in some triple sec for a while. I then spread these on top of the chocolate pudding for an extra delicious dessert.
