Homemade Granola with Pumpkin Spice
Making granola yourself is really not difficult! Oatmeal flakes, nuts, seeds... All delicious together. Just pop it in the oven and you're done! What makes this version so tasty? Well, that's the pumpkin spice. The pumpkin spice gives an extra dimension to this homemade granola! Delicious with yogurt or some (almond) milk. You can eat the granola for breakfast, as a snack or as a dessert. Now, how do you proceed?
What do you need?
• 500g oatmeal flakes (can be found in the supermarket, make sure you choose the natural version. Without sugars and other additives)
• handful of walnuts
• handful of cashew nuts
• handful of almond nuts
• 3 tablespoons pumpkin seeds
• 2 tablespoons sunflower seeds
• 4 tablespoons coconut butter
• 2 tablespoons chia seeds
• 3 tablespoons maple syrup

• 2 tablespoons black sesame seeds
• 3 tablespoons of acacia honey
• 4 teaspoons pumpkin spice

How do you make this delicious granola?
Place the oatmeal flakes in a large mixing bowl. Coarsely chop the nuts and add them to the oatmeal. Also add all other seeds and kernels and mix together. Melt the coconut butter in a saucepan over medium heat. Once the oil has melted, pour it over the granola mixture. Now add the honey, maple syrup and pumpkin spice. Mix well. It is normal for 'clumps' of granola to form. This is just what you want! This will soon become wonderfully crispy.
Take a baking tray and cover it with baking paper. Sprinkle the granola over it and place it in a preheated oven at 180°. Roasting takes about 25 to 30 minutes. Stir the granola regularly so that the top does not burn while the bottom is not baked. When the granola is golden brown, it is ready. Remove from the oven and let cool. The granola can easily be stored for about 2 weeks in a closed box with a lid.
BREAKFAST SUGGESTION:
Take a few strawberries and mash them with a fork into a paste. Add some honey (optional). Add a few spoons of (Greek) yogurt and mix together. Place the strawberry yogurt in a bowl or glass. Sprinkle some of the pumpkin spice granola over it. Finish with some raspberries, blueberries and pomegranate seeds. Tasty!
