Peach crumble. Star anise. Vanilla
We are at the end of summer, so take advantage of all that delicious summer fruit. Why not do something different with tasty peaches. Making it into a crumble, for example. Delicious! And you can prepare it in advance. The poached peaches keep well in the refrigerator for several days. The star anise and vanilla together with the peaches really provide a flavor bomb!
This is what you need for the crumble:
• 150g flour
• 100g granulated sugar
• 60g brown sugar
• 140g cold butter
• pinch of salt from our online spice shop
• coffee spoon of vanilla sugar from our online spice shop
• coffee spoon of star anise sugar
This is what you need for fruit preparation:
• 4 large (firm) peaches
• 1 liter of water
• 200g sugar
• juice of 1 lemon
• 3 to 4 pieces of star anise
• 1 vanilla pod (vanilla scraped out and pod halved) from our online spice shop

This is how you proceed:
1. We start by boiling the water.
2. Once boiling, add the sugar. Stir briefly until it has dissolved.
3. Then we add the star anises and vanilla.
4. Now gently place the peaches in it. Make sure you make a small cross incision at the bottom of the peach before placing it in the 'stock'. Let the peaches poach for 10 to 15 minutes on a low heat. (be sure not to let it boil!)
5. When the peaches are soft, remove them from the stock and let them cool briefly in some cold water.
6. Now you can easily peel peaches. Halve them and remove the pit. Cut the peaches into wedges and return them to the stock. Let it cool completely. You can prepare this one or two days in advance. Put the stock with peaches in the refrigerator.
7. To prepare the crumble, simply combine all the ingredients and knead into a crumbly dough.
8. Place the drained peaches in an ovenproof dish and add 2 to 3 soup spoons of the stock.
9. Now sprinkle the crumble over it.
10. Place in a preheated oven at 180°C. Let it bake for about 35 minutes.
11. Remove the crumble with peaches from the oven and let cool briefly.
12. Serve with a scoop of vanilla ice cream or peach sorbet, if desired.
Can't finish the crumble in one go? Then you can safely use it for another day or two. Warm up briefly in the microwave. Just as tasty!
