Pineapple Yoghurt Ice Cream (without ice cream maker!)
Now this really is a super simple dish! And you don't even need an ice cream maker for it. Very refreshing and probably even tastier in summer :-)
You will need this for 4 people:
- 1 or 1/2 Fresh, ripe pineapple (according to size of pineapple)
- 3 jars of natural yoghurt (I usually make my own, but otherwise I recommend Greek yoghurt as it is so soft and creamy)
- 2 tablespoons fine granulated sugar
- 1 teaspoon cardamom sugar
Here's how to proceed:
1. Take half a ripe pineapple (skin and hard core removed) or a whole one, if it is a small pineapple. Cut into small, bite-sized chunks and put them in the freezer. For at least 12 hours.
2. Take 3 jars of natural yoghurt and put them in the blender.
3. Add the frozen pineapple, sugar and cardamom sugar and blend until you get a smooth ice cream mass.
4. Serve immediately. Decorate with a mint leaf if desired.
