Recipe for Turkish Delight with Rosewater and Agar Agar

Recipe for Turkish Delight with rosewater and agar agar.

This past weekend, I had some time to try something new. We've just added orange blossom water and rosewater to our assortment. These are delicious flavor enhancers in modern and sweet cuisine. Rosewater is often used in pastries. After browsing the internet for a while, I discovered a nice recipe for Turkish Delight based on rosewater, which I tweaked with a few small twists. Most recipes always mention gelatin, but I replaced it with agar agar.

Here's what you need:

• A little sunflower oil

• 250ml water

• 450g granulated sugar

• 4 to 5 drops of red food coloring (food safe)

• 3 tablespoons powdered sugar

• 2 tablespoons cornstarch

 

What you need from our spice shop:

• 2 teaspoons agar agar

• 4 to 5 tablespoons rosewater

And this is how you proceed: Mix the agar agar, water, and rosewater in a saucepan with a thick bottom, and add the granulated sugar. Warm gently while stirring until the sugar has melted. The mixture will still be somewhat cloudy. Stop stirring and bring it to a gentle boil. Let it simmer gently for about 20 minutes. Remove from heat and add the food coloring, mixing well.

Take a dish and lightly grease it with sunflower oil using kitchen paper. Now pour the mixture into the dish and let it cool. Let it sit for a few hours (or a day).

Mix the powdered sugar and cornstarch together. Now remove the agar agar mixture from the mold and place it on a cutting board dusted with the powdered sugar-cornstarch mixture. Cut the Turkish Delight into small square pieces and coat them with the powdered sugar-cornstarch mixture. Now, there's nothing left but to taste. Be careful! Dangerously delicious ;-)

If you want to store the Turkish Delight with agar agar and rosewater, you can use parchment paper and a well-sealed container.
