Smoked Lhassa Curry with chicken and red Camargue rice

Tried something delicious today. Healthy, non-fat and tasty: a curry dish. This time I chose a special curry mixture: the smoked Lhassa curry. This curry is a typical Tibetan curry with herbs and spices such as cardamom, turmeric, allspice, ginger and cinnamon. The subtle smoke flavour is hellishly not overpowering, but just adds a sophisticated extra touch. The red camargue rice has a nice nutty flavour and goes very well with this.
You will need this for 4 people:
4 pieces of diced chicken breast
2 chopped onions
3 chopped garlic cloves
1 diced courgette
1 diced red pepper
1 handful of cherry tomatoes halved
3 teaspoons smoked lhassa curry
500 ml (Greek) yoghurt
Little olive oil
Red Camargue rice
Possibly a bunch of chopped coriander
Salt
Here's how to prepare it:
1. Put the chicken cubes in a bowl and add half the yoghurt along with the smoked lhassas curry. Mix together and put the marinade away in the fridge for an hour or so. The yoghurt will make the chicken extra tender!
2. Meanwhile, fry the onion in some olive oil. Add the garlic and paprika. Let it stew for a while on a low heat. Add the courgette. Let it stew at leisure.
3. Now add the chicken marinade and the rest of the yoghurt. Let everything simmer until the chicken is cooked. Season with some salt. Serve with the red camarguer rice and some chopped coriander if desired. Enjoy!
