Southern tomato pie with black olive tapenade

Time for a quiche with tomatoes and black olives. The perfect recipe to enjoy your lunch.

Southern Tomato Tart with Black Olive Tapenade

This is a simple dish, but it's so full of flavor. It's perfect for a light lunch on warmer days. Enjoy it with a glass of rosé or white wine :-)

 

What do you need?

• 1 roll of puff pastry

• +/- 400 g cherry tomatoes (I like to use ones with stems as they taste better), halved

• A tiny amount of sugar

• Optionally, some fresh basil

 

What do you need from our spice shop?

• 1 jar of black olive tapenade

• A bit of fleur de sel

• Some pizza seasoning

• A little olive oil

How do you make this delicious tomato tart?

  1. Preheat the oven to 180°C.
  2. Roll out the puff pastry and place it in a tart pan. Poke holes in it with a fork (both in the bottom and around the edges) to prevent the dough from puffing up too much.
  3. Take the black olive tapenade and spread it evenly over the pastry. Then, place the cherry tomatoes on top with the halved side facing up.
  4. Sprinkle some fleur de sel, pizza seasoning, and a little sugar over the tomatoes. Drizzle some olive oil over them as well.
  5. Place the tart in the oven and bake for 45 to 50 minutes. Then, let it cool slightly.
  6. Optionally, drizzle some olive oil over the tomato tart and garnish it with some fresh basil leaves. It's delicious served either lukewarm or cold. If you want to serve it as an appetizer, you can also serve it with some salad. Enjoy!
