For this calvados, they do not use grapes, but cidre made from apples and pears. The bitter/sweet apples are picked and processed in a membrane press to extract the flavor from the peel. There are several varieties including Saint Martin, Noel des Champs, Mettais and Doux Normandie. The apples are small with a high aromatic intensity. Perry pear is used to create extra acidity for distillation.
Characteristics:
Color: Mahogany color, clear and brilliant.
Nose: Very round. Earthy aromas, dried fruit with floral hints. Great intensity.
Mouth: Witty, long and intense. Well balanced between the aromas of fruit and aging (grilled hazelnuts). Very silky and concentrated.
