Chablis is the northernmost part of Burgundy, halfway between Dijon and Paris. The vineyards cover 3,500 hectares, of which 856 hectares are Premiers and Grands Crus. Premiers Crus account for 20% of the total volume of Premiers Crus in Burgundy. There are 40 different climates classified as Premier Cru, including Montée de Tonnerre.
This region has a continental climate (very cold in winter and hot in summer, with frost in spring). The soils are marble and give a unique character to Chablis wines.
After a soft pressing, part of the juice is fermented in double chambers of 456 liters. Another part is vinified and aged in stainless steel barrels. The wine matures for 13 to 15 months on fine lees before being bottled.
