Chimichurri can be turned into a sauce and marinade and is used with grilled meat in Argentinian and Uruguayan cuisine. Mix with some olive oil and wine vinegar to form a kind of vinaigrette. Delicious on grilled meat, fish, lamb or grilled vegetables.
Chimichurri owes its name to the Irish Jimmy McChurry, who fought for the Argentine struggle for independence in the nineteenth century. Legend has it that Jimmy was the first to prepare the Chimichurri sauce. Because the name Jimmy McChurry was difficult for the locals to pronounce, it was quickly corrupted to 'chimichurri'
