This delicious anchoiade is at the same time a light and powerful emulsion. The recipe is less salty than classic anchovy preparations, for an incomparable taste and softness on the palate.
The 'anchoïade' is a traditional dish from the south of France. It is spread on country bread and accompanied by small raw vegetables (celery, carrots, cauliflower...). And of course all these goodies are combined with a delicious glass of cold rosé!
Small personal advice: lightly toast the bread before spreading it.
