Fregola or fregula is a specialty from Sardinia. Like couscous, fregola is made from semolina. Fregola are actually small balls of pasta with a diameter of 2 to 3 mm that are first dried and then roasted in the oven. This provides a delicious, nutty taste that couscous does not have.
Fregola is very versatile and can be prepared in different ways. It can be cooked and used like rice. But you can also prepare the fregola as a risotto, as a pasta or as a replacement for couscous in a tabbouleh. For example, you can also add the pasta to a soup such as minestrone or you can use it with a lot of fresh herbs to stuff a chicken. For the more adventurous chefs among us, you can even use it for breakfast to replace the traditional breakfast cereals.
