Rouille comes from Provence, where the sauce is traditionally eaten with various fish dishes and fish soups, such as bouillabaisse.
Food pairing: Spread a piece of bread or crouton with it, place it on the bottom of your soup plate and pour the hot soup over it. Drink a glass of pastis and your heavenly experience is complete.
