Bolognese sauce (known in Italian as ragù alla bolognese) is a sauce based on meat and tomatoes. The recipe is typical for the city of Bologna, hence the name. This sauce is usually used with tagliatelle or lasagna. If you don't have tagliatelle around, you can also use this sauce with other wide, flat pasta shapes, such as pappardelle or fettuccine. But of course the rest of the world knows the extremely popular 'spaghetti bolognese'.
This ragù alla bolognese is a slow-cooked sauce. Ingredients include a characteristic soffritto of onion, celery and carrot, beef and also pork. Red wine, herbs, tomato concentrate and tomatoes are added. Then the dish is simmered gently and for a long time to thicken into a solid sauce.
This sauce is ready-made. I personally like it very much with the capellini from Rustichella d'Abruzzo. Some cheese on top. And enjoy!
