The process starts with the fermentation of Peping wheat, barley and rye. After boiling, cooling and fermenting into a kind of 'potato beer', it is first distilled in a large kettle to achieve a spirit of approximately 60% alcohol. It is then redistilled in a small still to 94-96% alcohol. After adding water, the distillate can rest for up to 6 months. In this way we obtain a spirit that is soft and rich.
