This Oude Pajotse Jenever is 100% malt wine. De Cort bases this on the authentic recipe of 1/3 rye, 1/3 barley and 1/3 malted barley, which is still ground with an old stone mill. After distilling, the gin is matured in oak barrels. This is often a new barrel, but sometimes a bourbon barrel. This barrel maturation gives this spirit its beautiful golden yellow color.
