The roots of the Tenuta del Pajaru estate are deeply rooted in the history and symbols of Puglia. A "Pajaru" is a rural dry stone building that was used as a shelter by farmers and shepherds. Only a skilled craftsman called a “Paritaru” had the wisdom and expertise needed to build these huts. To this day, the "pajaru" is a symbol of knowledge and experience, the same expertise needed to produce a good wine.
The Negroamaro "Paritaru" is the result of that folk wisdom that over the years has become an art in winemaking and that results in a unique wine with an intense red color with violet reflections.
