At Domaine Pujol, nothing happens without food. Every opportunity is good to share a meal with friends, whether it's breakfast during the vintage or a grilled meal among the vines. But on Wednesday afternoon at 12:30 there is a fixed appointment: according to time-honored tradition, all children and grandchildren gather around the table with the grandparents. Everyone arrives on time to enjoy this special moment.
The vines grow on the slopes of the “Balconies of the Aude”, located against the Montagne Noire. This unique location offers sandstone and clay soils, rich in herbs and scrubland. This natural harmony gives our vineyard the characteristic aroma of the region.
The grapes (50% Syrah, 50% Cinsault) are harvested at night to preserve their freshness and pressed immediately. The fermentation takes place at a controlled temperature, resulting in a light and refined rosé wine.
Tasting notes:
- On the nose: A subtle and fine nose that evolves after contact with the air into floral and fruity notes, including banana, white flesh, citrus fruits such as grapefruit and mandarin.
- In the mouth: A soft attack on the palate with a touch of refreshing bitterness in the aftertaste.
Food pairing:
Mercredi 12H30 Rosé is the ideal companion for cozy drinks and various cold cuts, white meat and roasted vegetables. This versatile wine also goes perfectly with dishes composed of meat and fish, such as paella, salads and gazpacho. Serve this wine at a temperature of 11°C, preferably in the shade of a gazebo for the optimal taste experience.
