After picking, the grape bunches are carefully destemmed and gently pressed. The fermentation takes place at a controlled temperature with native yeasts in stainless steel tanks. The wine is then aged for 1 month in clay pots (Tenaja de Barro), which contributes to its unique taste and structure.
The name Arrebujao refers to the blending (arrebujar) of different grape varieties, which gives this wine its unique character.
