The Colombo curry is an Antillean version of the Madras curry. The Colombo spice mix is ideally suited for Caribbean Colombo: a thick curry-like stew, traditionally made with goat, lamb or pork. Furthermore, the mix is particularly versatile in use. It gives a beautiful and flavorful crust to lamb, gyros, pork or roast vegetables. Also add to all kinds of rice and vegetable dishes. Or stir a few teaspoons of Colombo spice mix into a roux for a tasty curry sauce.
