Coriander seeds have a mild, sweet, spicy taste. Whole coriander seeds or grains are used in both sweet and spicy dishes. The seed, ground or bruised, is also used in game pâté, biscuits, ratatouille, curry dishes and Oriental dishes.

The whole coriander seeds have a stronger aroma than the ground coriander powder.
