Description
Ti Kuan Yin, from Fujian province (China), is a semi-oxidized oolong tea that is rolled into small balls. The tea leaves are roasted in large woks to stop the oxidation process. During the final roasting process, the tea develops woody, spicy and roasted notes. Literally, Ti Kuan Yin means "iron goddess of mercy" in reference to the famous legend that the goddess Kuan Yin offered tea to men. Ti Kuan Yin is a tea without bitterness and is also suitable for drinking in the evening.
Preparation
2 grams of tea in 200ml of water (or 12g per liter) temperature 80° to 90°C and a steeping time of 2 to 3 minutes. Also suitable for multiple infusions.
You can also prepare this tea according to the Gong Fu Cha, the Chinese way of making tea.
Tea and food pairing
The perfect match with pasta with walnuts and gorgonzola.
