Long-matured Calvados from Domaine Dupont, made from 80% bittersweet and 20% sour apples. These are mixed, crushed and pressed. The juice is fermented into cider. Six months after fermentation, the cider then undergoes a double distillation before becoming Calvados. This then matures for at least 3 years in oak barrels, a quarter of which are new. Then the Calvados is bottled.
Characteristics :
Color: Amber yellow. Clear and brilliant.
Nose: Soft attack, followed by a great aromatic intensity with green apple, geranium and minty hints. The aromas of calvados left on the sides of the empty glass reveal a lot.
Mouth: Consistent, slightly bitter, initially characterized by green apple. The aftertaste is vegetal, very broad.
