Las Ocho Vino de Pago - Chozas Carrascal

Grapes: blend of 8 different grapes.

14 months in French oak barrels and 12 months in bottle. Each variety is vinified separately. Fermentation at controlled temperatures below 25 ºC, with maceration between 2 and 3 weeks depending on each variety.

75% of the wine destined for Las Ocho is transferred into 220 liter French oak barrels, while 25% is kept in tanks. Before bottling, the final blend is made by mixing these two proportions, while the percentage of each variety depends on the vintage.

This results in an intense and elegant aroma. Powerful and meaty. Complex wine with soft and ripe tannins, with notes of coffee, vanilla and chocolate. Long aftertaste.

Food pairing : stronger dishes, lamb, blue cheeses.
