With the same care as when developing a new dish, Tim and Ben Boury, owners of Boury*** in Roeselare, have created the Lavas gin. Their focus was on one main ingredient that forms the basis of the recipe and determines the taste, aroma and garnishes. Each ingredient has been carefully selected for quality, preciousness and sustainability, which is at the heart of Boury's vision, both in the kitchen and in the glass.

Boury uses lovage, an absolute highlight as a seasoning in their cuisine, to give an aromatic and distinctive character to the gin. The combination of lovage and fennel makes this gin extra special. The soft spiciness with hints of anise form the start, followed by the warm and almost soothing character that is due to the malt wine. This makes this gin a perfect ending after a lunch or dinner and extremely suitable to enjoy after a delicious meal.
