At Domaine Pujol, nothing happens without food. Any occasion is good to share a meal with friends, whether it's a breakfast during the vintage or a grilled meal among the vines. But on Wednesday afternoon at 12:30 there is a fixed appointment: according to time-honored tradition, all children and grandchildren gather around the table with the grandparents. Everyone arrives on time to enjoy this special moment.

The vines grow on the slopes of the “Balconies of the Aude”, located against the Montagne Noire. This unique location offers sandstone and clay soils, rich in herbs and scrubland. This natural harmony gives the vineyard the characteristic aroma of the region.

The grapes (40% Grenache blanc, 30% Macabeu, 30% Chardonnay) are harvested at night to preserve their freshness and pressed immediately. The fermentation takes place at a controlled temperature, resulting in a fresh and lively white wine.

Tasting notes:
- On the nose: Rich and balanced aromas of jasmine, grapefruit, white peach, quince and almonds.
- In the mouth: A full and fresh wine with a slight salty touch that makes the mouth water.

Food pairing:
Mercredi 12H30 Blanc is the ideal accompaniment to a Caesar salad, fried sea fish, chanterelles in cream sauce or fresh goat cheese. This wine is also perfect to enjoy at a social gathering. Serve this wine at a temperature between 10°C and 12°C for the optimal taste experience.
