New Grove 8Y Islay Rum, a traditional rum, is first matured for 7 years in French Limousin oak casks, which impart soft woody notes and a rich structure. This is followed by an additional year of maturation in peated ex-single malt whisky casks from the Scottish island of Islay, famous for its smoky, maritime influences. The result is an elegant, complex rum with vibrant citrus notes and a subtle smoky edge.
