What is 'Peat'?
Peat is thousands of years worth of rotting vegetation. When peat is harvested, it is cut into small slices, stacked into pyramids and dried. The substance is in the smoke. Barley grain is exposed to the smoke of a peat fire to stop germination; a crucial part of whiskey production. Once dried, the malt is mashed and the peat is measured at PPM or phenol parts per million.
What does 'Peat' (peat) taste like?
Peat varies by region and can add tasting notes including anything from soapy, rich, smoky, herbal, creamy, salty, citrus, nuts, etc. Depending on the time the malt is peated.
Aroma :
Being an aged Dominican rum, aromas of cane molasses and vanilla are prominent, produced by the aging at the source, perfectly combined with hints of smoke, peat and malt and nuances of notes of the last maturation in single malt casks.
Taste:
It is robust, long-lasting and persistent on the palate, with an elongated taste that ensures for smoky accents that give it a very special character.
