The soil on which the grapes are grown is clay-limestone with a more pronounced resurgence of limestone in the upper part of the village, including the “Clos de Malte”. Well irrigated. Located at the foot of Mont de Cène (Mountain of the "Three Crosses"), in a small valley, it is thus perfectly exposed and protected from the wind. This 7 hectare enclosure has been entirely owned by Maison Jadot since 1993 (5.5 hectares of Pinot Noir and 1.5 hectares of Chardonnay).
The harvest is done manually in small crates to ensure the integrity of the fruit to keep. The grapes are then carefully sorted by hand and then destemmed. The grapes are macerated for 3 to 4 weeks in open wooden or stainless steel vats. The barrels are punched twice a day during fermentation. The maturation takes about 18 months in the barrels of our cooperage, about a third of which are new.
Elegant wine with a deep color, complex aromas of ripe red fruit, almonds and some earthy notes. The taste is deep and the tannins quite firm. Delicious with stews with poultry or game birds and not the heavy dishes with red meat.
Food pairing: Grilled red tuna, tataki beef, terrines (rabbit, pork, etc... ), moussaka, veal liver, fondue bourguignonne, steak tartare, roast veal, veal cutlet, duck breast salad, fried guinea fowl, hard cheeses.
