Szechuan pepper or Sichuan Fagara pepper, is a 'false pepper', namely dried peels of the fruits of a type of citrus plant. Szechuan pepper has a light lemon flavor and mild spiciness, slightly spicy and slightly numbing effect on the tongue.

Food pairing:
The Sechuan pepper goes well with cheese, meat, vegetables, foie gras, fish, poultry and desserts. Be sure to try it with scallops and some fleur de sel. The Sechuan pepper is also a popular botanical in Gin Tonic.
