The Tagliolini Paglia e Fieno (literally "straw and hay") is a traditional Italian pasta consisting of plain and spinach tagliolini, which creates a beautiful color contrast on your plate. This pasta is produced in an artisanal way by the brothers Massimo and Gianpiero Curti, according to age-old Italian methods.
By using high-quality wheat semolina and producing it in bronze molds coated with Teflon, the pasta has a rough texture that allows sauces to adhere better. This makes Tagliolini Paglia e Fieno perfect for both light and creamy sauces.
Recipe ideas:
Tagliolini with mushroom cream sauce – Fry mushrooms with garlic and cream, mix with the pasta and sprinkle with Parmesan cheese.
Tagliolini with butter and sage – Melt butter with sage leaves, mix with the pasta and finish with Pecorino Romano.
Tagliolini with spinach and ricotta – Mix the cooked pasta with fresh spinach, ricotta and a pinch of nutmeg.
Ingredients: durum WHEAT semolina, EGGS 19.5%, spinach 1%.
