Ripasso is often described as the second wine from Amarone producers. Not such a powerhouse as its big brother, “only” 13.5%. After the maceration of Amarone, the pulp and peels are dropped into an empty cuve, into which the “simple” Valpolicella Classico is pumped. This wine therefore undergoes a new maceration and even refermentation thanks to the residual sugar that is still in the pulp.
Winery / Wine region
For four generations - since 1910 – the Spada family is involved in wine production. Today the company is run by brothers Alberto, Claudio and Francesco Spada. The vineyards are located in the plains around their native village of San Pietro in Cariano, the heart of Valpolicella. To produce Valpolicca Ripasso, the pressed grapes of the Amarone & Recioto and adds them to the simple Classico wine, resulting in extended maceration and refermentation for more complexity, taste and aromas.
